I don't know how good this translation is, so, if anyone has a better translation please write to the Snooze and tell us about it, since I plan to make this a regular theme. A direct translation will be something like "house-man's food", which of course makes little sense since both "hus/house" as well as "man" has changed meaning considerably since the days the words were incorporated into the English language, a millennium ago, from the Viking language. But basically it means the classic dishes that have appeared regularly on the Swedish, everyday household menu for a long time. I also challenge everyone else to share with the rest of us your own, local specialities in this column. After all, doesn't universal understanding involve what we all eat? Isn't this one of the common denominators when it comes to cultural sharing? If you agree with this, please think about what ordinary, everyday, boring dishes you eat, and remember that your boring dishes might very well be a culinary high for the rest of us that never tasted it! Just remember pasta, pizza and Chinese take-away! :) ----------------------------------------------------------------- FIDONEWS 24-02 Page 3 8 Jan 2007 ================================================================= FIDONET'S INTERNATIONAL KITCHEN ================================================================= Husmanskost: ˇrtsoppa (pea soup) By Bj”rn Felten, 2:203/2 This is probably one of the most common dishes in Sweden. Traditionally it's always served on Thursdays and usually with pancakes with whipped cream and jam as a second dish. Any food establishment here, serving traditional food only, that does not have this dish combo on the menu every Thursday, is doomed to failure in Sweden. And any shop-keeper here, that does not have dried yellow peas, or at least ready made pea soup, on his shelves will inevitably go the same way. Those of us Swedes, that served in the military, have a very special relationship to this dish, since the army version of it is generally regarded as by far the best. And since I *did* serve in the army, and *was* interested in cooking already then, I can now reveal the (really not very) secret, Swedish Army recipe. This is one of those dishes that gets better the bigger the batch you make, one of the reasons why the army version always becomes so good, and it also is perfect for deep freezing, so I recommend you all, after you've tested the recipe to make it according to your own taste, to scale it up considerably. As usual I have absolutely no idea about what you can find in your local store. If there's no dried yellow peas to be found anywhere, you might consider talking to the store manager and tell him about this classic, Swedish recipe, and maybe he'll even consider putting dried yellow peas on his shelves together with the recipe? * * * * * * * 1 kg dried yellow peas 3 l water 3 finely chopped onions 500 g salted pork (or similar meat) 1 tbsp (15 ml) salt 1 big branch of live, or 1 tbsp of dried, thyme Soak all of the ingredients but the salt, in room temperature, in the water, for at least 24 hours. The longer the better. Add the salt and let it all boil together for one hour. As usual, when you want a long time slow cook, using the oven heated to 120C, after you've brought the pot to a boil, is best. That way nothing will burn in the pot. Give it a good stir a couple of times. Pick up the meat and cut it up in small pieces and then put it back in the pot. Serve with dried or chopped, fresh thyme sprinkled on the soup, and a big lump of mustard on the edge on the plate. FIDONEWS 24-02 Page 4 8 Jan 2007 And hey! If you could type it on your keyboard, it's probably quite OK. No line may be longer than 70 characters. b) Put a title to the article. Put the title in two times. The first time, on the first line, with an * before it. The second time, on the second line, without the * and centered. This will help in the format since the title with the * is removed and used in the index, the second line will become the headline. On the third line, put your name and FidoNet address, present or former. If former, you may want to add some other address where you can be reached for personal comments. c) Deadline for article submission is Sunday, 22:00 UTC.
